Aroma Thyme Bistro is a farm-to-table restaurant in Ellenville, NY, in the heart of the Hudson Valley. Chef Marcus Guiliano and his wife Jamie have spent over 20 years building direct relationships with local growers, sourcing ingredients from more than 45 farms across the region.
The kitchen serves grass-fed beef, wild-caught seafood, and seasonal produce with full menu transparency. Every dish is prepared without corn syrup, artificial chemicals, or preservatives. The bar carries over 800 independent wines, craft beers, and boutique spirits, many selected during visits to more than 350 wineries and distilleries worldwide.
